We can't get corned beef here so mum always brings a tin over - as well as a couple for herself.

Oven bake big potatoes. Cut in half, scoop out the soft tatty, put in a bowl with a knob of butter, some pepper, finely chopped onion, corned beef and lashings of grated cheese. Mix all together, put back into the potato halves and bung back in the oven till the skins are well crispy and the insides are cooked.
Lush!
