My mum had a foolproof method for roasting any bird - cook it upside down for 2/3(ish) of the time then turn it over to brown.

I have just been watching Food Unwrapped (C4) and mum's method won. Eat your hearts out Jamie, James, Nigella, Rick, Gordon......

They also roasted chestnuts.

We had a York range in the house when I was young and dad used to roast chestnuts on the coal shovel. Our job as kids was to prick them a few times with a compass point so they would not explode.

Guess what the experts were doing...... Image

Why do people make such a big hassle over cooking xmas dinner it's just the same as Sunday roast
Except it's a bigger bird
I don't do all these new fangled ideas I'm like most people put butter under the skin and roast it on its breast
Hope everyone has a nice xmas dinner
