What's for dinner Monday?

I've been busy in the kitchen today.

I've made (and frozen) spicy carrot and coriander soup. Ditto spicy lentil and carrot soup. Also a red pepper and tomato soup. :D

I've never been a big meat eater (don't eat pork or lamb) so chicken is a firm favourite for meals in this house.

But as I adore veggie food I've made for tonight a chickpea and cauliflower curry and some naans.

Can't wait to come home from work and scoff it. :lol:

Pork sausages, broccoli and cauli bake ( using some of my precious cheddar cheese) and saute potatoes.

Lamb chops, not sure what veggies yet :)

Your soups sound delish Ally! D bought a soup maker just after Christmas - so far we've had carrot and coriander, but I believe asparagus is on the menu for tomorrow! Nom nom :D

I had friends round for lunch yesterday and still have some nibbles left over; so suspect that'll be my dinner :D Pita Chips with beetroot humous and/or spicy edamame dip. Also got some olives

But I've also got veg in the fridge that need using up before they develop a life of their own so I think I'll make a veggie quiche tonight then I'll have for two lunches at some point this week

Bit of a makeweight day today ……. snitzelled (?sp) chicken breasts in a light curry flavoured coating, accompanied by cucumber, tomato and yoghurt.

Mrs O is now gobbling sesame seed and seaweed flavoured oat biscuits. :shock: It seems to be some sort of local delicacy. Quite nice, actually, but leaves a bit of a fishy aftertaste .... :lol:

We bought a soup maker last year, but more often than not these days, we just prepare a huge vat of the stuff in a big pan on the hob.
Red lentils, sweet potatoes, carrots, celery, peppers, lardons. MrsO does the peeling, Ossie does the chopping, and the whole ensemble provides us with a midday meal for 5 or 6 days!

Just me and John tonight and we’ve had Sloppy Joe Pasta, a recipe I had from a supermarket magazine a few years ago. I’ve adapted it a bit for pressure cooking though and cooked the mince, tomatoes and pasta in the Instant Pot for 3 minutes and then added ketchup, chilli powder and cumin. That all went into a dish with breadcrumbs, chilli powder and grated cheese on the top, then in the oven to crisp up/cheese to melt and it was done. It made enough for us and three lunches for John to take into work.

Ossie, when I make soup it's in the slow cooker, then I zap it in situ with my stick blender, but D loves her new gadget ;) :lol:

I had jacket potatoe with cheesy baked beans

When I make soup just do it in a saucepan then zap it with hand blender
