So much stuff that's out of date

I'm sorting the last of the stuff that needs to go back into cupboards - all the tins and jars of 'stuff' that I had. At lest 90% of it is past its "Best Before" date; so now trying to be realistic between what really will be past its best before and what would still keep a bit longer given that the dates are more health and safety regulations than common sense
I mean a jar of pitted olives - best before December 2019.... surely they'd still be fine. Never opened and always stored in a dark cool place?
Are you a pedantic "best before" observer or do you wing it?
