Mushy peas Mk2.

Two cupfuls of frozen peas in a pan with 1 tsp of bicarb and just enough water to cover the peas. Bring to a boil then take off the heat and leave to go cold. Drain off the bicarb water and top up with cold water. Bring to the boil again then reduce to a low simmer. Stir the peas every now and again and when they strart to break up add a splash of vinegar - the pan will froth as this neutralises the bicarb. Keep stirring till the peas are of a consistency you like. Do a taste test and season as desired.

At this point some weirdos add chopped mint, but I like a leetel beet of sucre instead.

Oh well done, Ton, I knew you could do it. :D :D :D

I have never thought of using the left over batter to do onion rings, but I will now! Onion rings and mushy peas sound just right. :idea:
