You do not need to use ultra-expensive extra virgin olive oil for cooking and dressings (as per Jamie Olivoiler) any vegetable oil will do.
Try these:
Classic French. 1 tsp Dijon (or English) mustard, 2 tbsp white wine or cider vinegar, 6 tbsp veg oil, a pinch of sugar and salt and pepper to taste.
Honey and mustard (my fave). 2 tsp wholegrain mustard with 2 tsp honey and a splash of lemon juice in a small bowl. Gradually stir in 6 tbsp oil and season with salt and pepper.
Parsley. Good with fish. Good handful of chopped parsley, then add to a small bowl with 1 tsp mustard, 1 tbsp sherry (cider) vinegar, ½ clove grated garlic and 3 tbsp oil. If you want a sauce do a flour and butter roux and mix in..
Sweet chiili, Equal quantities of chilli flakes and sugar. Get in the zest and juice of a lime with a splash of wine vinegar. Equal the volume with veg oil.
