I wasn't sure what to have for dinner tonight so figured I'd have a look in the fridge and wait for inspiration to strike. Sadly, the fridge is rather bare, besides a few left over ingredients from when I had my vegetarian friend(s) over and also Friday just gone.

I started by grating a lonely courgette to make the usual courgette / garlic mix to go over pasta but ended up adding a bit of left over double cream, vegetarian parmesan as well as some ricotta. Turned out rather nice even if I say so myself, but definitely not a meal for anyone dieting :lol:

Oooh yum indeed :D
One of our top 10 meals in the world is courgette pasta - usually half-slices, either slowly or quickly fried in butter/olive oil with squished garlic in it, then add to penne with chopped red chilli, dollop of creme fraiche, s&p, and basil if we have it - and parmesan to add at the table :)
