She's on Food Network and has just done these.... Korean pancakes.

Rice flour and SR flour mixed 2:1 with salt and water to make a thickish pancake batter. In to the batter go prawns and diced scallops, red and green chilli, shredded spring onions, garlic and chilli powder. The pancakes are cooked on a medium heat to allow the other ingredients to cook - golden brown on each side.

A dip of soy sauce, rice wine, sesame oil, chilli paste and garlic is essential

And how about red bean lollies for dessert? :shock: :lol: :lol:

I think that I am going to get into Korean food.

Korean food is fantastic, similar flavours to Thai but more variety and different techniques :)
I have a whole chicken recipe in my handwritten book that I've been cooking for 20 years or more, labelled Korean chicken.
Can post tomorrow or soon if you like.

It's my own recipe, a mixture of other Korean, Vietnamese and Thai ones.
Quantities are for a small chicken, to serve two.

1 teasp black peppercorns
1 teasp coriander seeds
2 fat cloves garlic, crushed
2 hot red chillies, chopped small (or a good teaspoon from a jar of crushed or paste), or a teasp of hot chilli powder
1/2 teasp salt
Good squeeze lime or lemon juice
1-2 teasp light soy
1 teasp oil
1 teasp sugar
3-4 whole garlic cloves (or more), unpeeled but nick the ends, so you can squeeze out later.

Crush pepper and coriander in pestle & mortar, then mix with everything except whole garlic.
Rub all over chicken, leave an hour or so if time.
Put oven at 190c.
Put whole garlic in roasting tin, add a wine glass of water.
Put chicken on rack over dish (not essential but nicer) and cook according to weight.
Baste regularly, adding more water before it dries up (have the kettle boiled).
Cover flesh with foil if too brown.
Remove chicken and cut in half to serve. Keep warm.

Add water to pan if needed, plus salt & pepper. Squish garlic, boil briefly; taste and adjust if needed (lemon, lime, soy, more fresh chilli?).
You don't want loads - serve in little bowls with the chicken as a dipping sauce.
Can also have little gem leaves to put in chicken and dip in.

Another one, Madhur Jaffrey Korean chicken patties:

400 minced chicken (or turkey, or pork - my note)
1 spring onion
1 lge clove garlic, crushed
1" ginger, grated
1 tbspn roasted sesame seeds
1 tbspn sesame oil
1 tbspn light soy
Black pepper
1/2 teasp hot chilli powder (recipe was before fresh were readily available!)

Mix everything together. Make into patties, fridge till ready to cook.
Heat oil med-high, Brown fast each side then lower heat till done.

Serve with dipping sauce. Mix:
1 clove crushed garlic
1 spring onion, sliced
4 tbspn light soy
2 tbspn white vinegar
1 tbspn sesame oil
1 teasp sugar
1 teasp roasted sesame seeds
Plus chilli if wanted.

although to be fair - to me anything with garlic, chilli and ginger sounds fantastic :lol:

Oh, thanks for those Di.

The series is new and I see a lot of 'heat' going into the dishes and a lot of them are very 'brothy' in nature.

Yes but it was daytime, when I don't usually watch tv, but I went looking for it, so it's obviously on repeat.
7pm I'm often in the kitchen.
I knew it was Food network, but had trouble finding that :D
Now I know, it won't matter what episode I find :)
