fool proof and tasty lamb shank recipe please

I love a good lamb shank but have never cooked one myself at home - only ever eaten one in a pub, cooked by them. Anyone have a good tried and tested, easy yet tasty recipe for one?

I quite like the look of the pie that James Martin does but for a first attempt thought the slow cooker may be better and was thinking of doing it the way I'd do a beef stew, ie carrot, celery, bay leaf, stock (lamb I guess?) and a bit of red wine - oh and garlic?

any recipe suggestions gratefully received

Ria, you just about have it. Seal the shanks in a little oil and butter then stand them up in the slow cooker. Sauté the veg and garlic in the same pan with a few spoonfuls of plain flour towards the end then into the cooker. De-glaze the pan with a glug of wine and add that and the stock to the pot and cook away. Rosemary and bay are a must.

Tip from Ken Hom: use chicken stock for strong meats.

I often do lamb in the slow cooker Ria, and yes rosemary really goes beautifully :) I don't always seal the meat, but it does help ;)

Mr Osc does lamb shanks in the slow cooker. He uses a tin of chopped tomatoes, diced root veg (whatever we have), bay, mixed herbs. I don't like alcohol in food particularly, and always found lamb shanks to be too heavy when done with wine, so the only liquid comes from the tomatoes. Always delicious with mash and some very lightly cooked shredded cabbage - yum!
