Ginger beef with fried rice.

Another favourite.

Rice (1 measure of rice to 2 of water) cooked, drained and left to go cold

Beef
Sirloin steak or other quality beefsteak cut in strips.
Ginger, lage thumb size (3cmx5cm/1"x2") cut in matchstick strips
2 dsp oil
1 dsp cornflour

Put the steak in the freezer until stiff but not frozen. Remove any fat then cut 3mm - 1/8inch slices across the steak from the long side so you get short strips. Mix the other ingredients in a bowl then stir in the beef. Cover and marinade for at least three hours.

Sauce.
Mix together
1 Tbs oyster sauce
1 Tbs soy sauce
1 dsp hoisin sauce
1 dsp sesame oil
150 ml water
1 dsp cornflour
Drop of sherry or red wine (opt)
1/2 tsp ground pepper

Medley of chopped veg.
A few of anything really (onions, mushroom, peas, spring onions, baby sweetcorn, peppers...) cut stir fry size.

Heat a pan/wok then add the beef mixture. Keep stirring for 3 mins or until it is cooked then add the sauce and heat for another few minutes. Remove from the wok and set aside in a dish. Add a drop more oil to the hot wok. Stir fry the vegetables for a minute or so. Put the beef back in and heat through. Set aside again.

Make sure the cold boiled rice is fluffed up then add it to the wok with another dash of oil and heat well through. Finish with a splash of soy sauce.
