Thai chicken soup

I got a whole cooked chicken in Asda for £1.50, but never mind.

Broth.
What is left of the chicken plus bones and any other bits - keep some good bits aside for the soup
Thumb sized piece of ginger grated, sliced, bashed, whatever
2 Smashed garlic cloves
Couple of sliced spring onions + small chopped onion
Tsp of black peppercorns or cracked equivalent
Stock cube or chicken stock
Water, total of stock and water is enough to cover the chicken

Soup
Tbs soy sauce
Tbs honey
Splash of fish or oyster sauce
Juice of one lime or equivalent from a bottle
2 noodle nests
Chilli ...as many as you like - start mild
Chopped pak choi leaves
2 chopped mushrooms
4 spring onions cut 3cm long - white and green
75gm beansprouts
Previously saved chicken

Simmer down the broth ingredients for 60 - 90 minutes then drain into a new pan. Bring the broth back to a simmer adding the soy, honey, fish or oyster sauce, lime juice and the noodles. While that is happening sauté the chilli, pak choi, mushrooms and spring onions then add to the soup and cook for three minutes. Just before serving throw in the beansprouts and cooked chicken.

Hoisin sauce, peanut butter and creamed coconut develop different flavours - one, any or all. I like peanut butter for a sort of satay soup.

You know I would love that but I do not own a passport.... yet. ;) :lol:
