Just making some for Ria and Nadine, thought I'd share the recipe.
2lb chorizo, cubed
20oz brad beans
1/2lb presunto or 4 belly pork slices or both
100ml olive oil
3 large white onions, chopped
3 cloves of garlic, minced
2 bay leaves
2 tsp paprika
1 tsp salt
1/2 tsp pepper
100ml tomato sauce ( we don't have any in the house, so I use a couple of squirts of tomato puree)
350ml chicken stock
200ml white wine
Using a large pan on the hob, saute the onion and meats in the olive oil for 5 minutes. Add the other ingredients, apart from the broad beans, bring to the boil and simmer for 15 minutes.
Add the broad beans and cook over a low heat for 30 minutes.
Enjoy an authentic Portuguese dinner with potates or rice or just on it's own
I ususally use three different chorizo's, for flavour.
