Not a million miles from our rock cakes …. could you post up the recipe, please, Kaz? We've certainly got raisins in stock, not sure about the rolled oats though.

I've finished the ironing, so here goes 8-)

Oat and raisin cookies

100g butter
25g light brown sugar
2 x tablespoons of clear honey
100g SR flour
50g raisins
1/4 teaspoon of mixed spice
100g oats

Pre-heat the oven to 150°C fan oven, then line a baking tray with greaseproof paper, or grease the baking tray.

Microwave the butter, sugar and honey for 1 minute, or until melted.

Stir in flour, spice, oats and raisins.

Mix in well, then leave to cool for 5 minutes.

Roll into 12 balls, and flatten them out on the baking tray.

Bake for 15 minutes, then cool


I didn't have any mixed spice, so used ginger instead. It just warmed them up a little, without tasting too gingery :)

Interesting that it uses honey rather than golden syrup, which most similar recipes have.

At last, something to make with the rolled oats I have left over from making loads of ready-brek. And I have raisins soaking in voddy. Yummy.

Can I swap the mixed slice for mixed spice - it's all I have in? :P
