Left over roast lamb

We have loads of left over roast lamb and I can't decide what to do with it other than a Shepherds Pie (my favourite use for left over lamb).

Any ideas - something quick and simple as I want to do something with it for dinner tonight and I feel terrible and really just want to go to bed. I can't ask Mick to cook - obviously! I want to do something that I just sort of bang in a pan and it's done!

Also, I was wondering about making a pie with it on Friday as I have some left over puff pastry that I could use for the top. I wasn't going to bother with a pastry bottom, just a lid. Do you think lamb will be too greasy for a pie though, especially one with a puff pastry top.

I'm going to put some in the freezer. It was a huge piece of meat - we got it out for Monday and then with everything that was going on never ate it. I cooked it for last night but then we had friends come round and we ended up having sausages and chips so I really need to use some of it up tonight!

Curry? At its simplest, a sliced onion, a couple of tablespoons of Patak's paste, the lamb, tin of tomatoes, probably some water as well, maybe yoghurt or coconut milk.
Paul Hollywood has a recipe for Moroccan spiced lamb pasties so the pie idea should be ok.
Or process/mince it and freeze it for when you feel more like it :) Or actually, freeze it in a lump or big chunks, I thawed a little piece of pork the other day and was really surprised that it was just as good as fresh.
Sorry, you did say about freezing, I'm having a dopey day :)

If I had roast lamb I do not think there would be any left over. :D

This is really simple but very tasty, believe me. Just cut up your lamb and put in a casserole dish. Add a little gravy, not too much. Top with cooked crushed (not mashed) potatoes and top that with a mixture of breadcrumbs, cheese and mixed herbs and seasoning. Bake. Delicious.

Thank you. They both sound fab.

I had tomato soup in the end - it was all I could manage but I will do one of those for tomorrow night.

Cold lamb...............just eat it as it is with pickle and chips!

Other than ham and chicken, I can't abide cold cooked meat. For some reason just the thought of it makes me shudder!

Toasted sandwiches.
Now, I'm not sure if I hear hubby right, but he calls these things yokem burgers. He cuts the meat up, and leftover potatoes, pumpkin, kumera etc, mixes it with an egg or more, the makes a burger pattie out of them. But I can't for the life of me remember what we have them with. I know the kids love them though. :) If your interested ill ask for full instructions.
