Sponge cake

I made my first sponge cake today using this recipe http://www.nigella.com/recipes/view/egg-yolk-sponge-cake--2448.

It cooked lovely, tastes fantastic, but it didn't rise in the middle, and it didn't cut very well in the middle.

Any ideas where I went wrong?

Weka, there doesn't look to be enough ingredients there to fill an 8" tin, so I suppose it needs a lot of beating to get loads of air in. And also I would make sure the oven is really hot before putting the cake mix in.

Ah, when it says 'beat well', have a google for fatless sponge, I think you need to do a bit more than 'beat well' ;)
A bowl over simmering water or an electric mixer for ages and ages rings a bell.

Edited to add, all the other recipes I've found use whole eggs. Yolks are good for chocolate mousse, or best of all creme brulée :D
