Chunky Minestrone Soup

This is what we had for dinner last night (a fast day).
This BBC recipe is the basis:

But with adjustments. Even the proper recipe, if you read the reviews, would be ok as everyone says it makes way more than 4 portions.
With that in mind, this is what I used - with calorie count.
1 onion - 30
1 lge carrot - 25
2 sticks celery - 10
1/2 leek - 10
175g potato - 140
Tin tomatoes - 80
1 tbs tomato puree - 20
200g cabbage - 50
50g spaghetti (raw weight) - 180
2 rashers streaky bacon - 120
1 tbs oil - 40
Total calories 705 - 176 per portion!
Plus a big clove of garlic which I forgot to weigh, and an Oxo veg stock cube.

This still made a huge pot; we had a great big bowlful each, with parmesan grated on top. I didn't have any tinned beans, tbh it doesn't need them at all but would add them if I wanted.
There's loads left, it's definitely 4 big portions.
And it needed quite a bit more liquid than the recipe says, plus longer cooking at each stage, but it's a dead easy recipe and absolutely yummy :)

Pretty much the same as the recipe I use Di, but I use mushrooms instead of cabbage, and bung in a sprinkle of oregano and basil.

It's a good winter soup and it freezes well.
