Spanish mojo chicken

I'd thawed chicken breasts, but hadn't decided what to do with them.

I found a Spanish recipe online, for 'Spanish mojo chicken in serrano ham'. It said to cut a slit in the breast and stuff it with a mix of cumin, garlic, chilli, salt, olive oil, orange & lime juice (there were various stages to this bit) but the mix of chilli, cumin & garlic is harissa, which I had in the freezer. I also happened to have half an orange and a couple of limes, so...

Mix harissa with olive oil, orange & lime juice, salt & pepper. Slash chicken breasts 3 or 4 times, coat with mix all over.
Cut an onion into wedges, put in ovenproof dish, sit chicken on top. Put in oven 200c/fan 180c for 20 mins. Baste chicken, add a good few cherry tomatoes, back in oven 10 mins. Taste juice. Mine was HOT (depends on harissa) - added a big dollop of creme fraiche. Back in oven 10 mins. Bloody gorgeous :D

I've always got those ingredients in so that's Sunday dinner sorted. :D :D

The original recipe said to wrap each one in serrano ham, but I just couldn't see the flavour being right with the orange/lime/chilli etc.
I'm happy to be told otherwise though if someone wants to try it :D

Also there was no creme fraiche in the original, but that juice was hot (the harissa came back from Tunisia with us), plus it was nice to have a bit of sauce :)

I wouldn't have added the ham either Di - it's got a flavour not be with messed with imo. :D
