That Summer Chicken recipe

You know, the one with cherry tomatoes, creme fraiche and pesto?
The same idea works really well with ready-made spinach & ricotta tortellini :)

For 2:
Boil tortellini per instructions (usually just 1-2 mins).
Drain that; in same pan, heat olive oil/melt knob of butter, add halved/quartered cherry or baby plum tomatoes. Stir around till beginning to soften, add a big dollop or two of creme fraiche, a tablespoon or so of pesto and seasoning.
Add pasta, stir in to coat well and serve - with a few torn basil leaves of you have them, and parmesan at the table.

About 10 mins, start to finish :)
Garlic bread is of course gorgeous but not obligatory ;) :D

We have TONS of cherry toms from the greenhouse, might try this with some nut free pesto :)

Kaz if you have basil, when I make it I never add the pine nuts ;)

Oh, also, they're not nuts but I guess you wouldn't want to risk it.
I was put off by Ali (as opposed to Ally) who got something called pine nut mouth, caused by the fact that pine nuts go off quite quickly. It's horrid, so I stopped buying them for anything, whereas in ready-made pesto they should presumably be fresher than any from the shops.

I love the summer winter chicken - though we haven't had it for ages (Micks not that keen).

My basil didn't grow well this year, unlike last, and I need a bit for my pasta sauces, so I'd probably buy the pesto. Some pesto containing stuff has a nut warning so I tend to look for when it says nut free, just to err on the safe side.

That mouth thing Ali had sounds horrid :shock:

It is Kaz, she was without any sense of taste for weeks :shock:

Sainsburys did do a frozen pesto, in little pellets, which was perfect, but they stopped it :roll:
Whenever I bought a jar the end would go off, so now as soon as I open it, I freeze the rest in a silicone ice cube tray (charity shop lol), then you can just tip it into a bag :)

The supermarkets usually have basil plants for about £1, they do well on the kitchen windowsill :)

That might be the best option then, just to buy a couple of window sill plants! At least that way I'd know it was fresh :shock: I had never heard of that before, but to lose all taste for a month :shock: :?
