One pan Chorizo, bean and veg medley.

I used a wok, but any pan would do so long as it is big enough to take the ingredients with room to spare.

1 or 2 dsp Veg oil
Chorizo, about 15 slices for two portions
2 crushed cloves of garlic
Med onion sliced lengthwise
3 to 4 quartered mushrooms
Diced chillies, as many as you like
Tin of mixed beans in tomato sauce
1 tsp of curry powder or paste
1 dsp of tomato purée
1 dsp of soy sauce
Salt to season

Heat the oil then when hot add the chorizo for half a minute and stir.
Put the garlic, onion and mushrooms in and stir for about a minute, Turn the heat to medium then add the beans, curry, purée and some of the soy. Rinse the bean tin and add the slurry to the pan. Stir everything well and let bubble on a lower heat for a minute or two. Take a taste and if needed add the rest of the soy sauce and possibly some salt.

I had some with one of the flat breads I make and it went down a treat. :D :D :D

I had done a new shop, Jo, so it was a clear out meal of bits and pieces needing using up. If I still had some red or green peppers left I would have used them as well.

It is a surprisingly hearty meal - cheap and quick to make.
