Cauliflower cheese soup

Postby tonicha » 25 Jan 2013, 12:21

As requested xx

1 onion
1/2 teaspoon paprika
1lb 4oz cauli or 567g - small florets is better
1 1/4 pint stock or 710ml. I use vege, but chicken bovril would do
1/4 pint milk (I use soya)
12 cheese triangles
salt and pepper

Peel and finely chop onion and saute in a little olive oil with the paprika on a medium to low heat until softened.
Add cauli florets and stock, bring to the boil, cover and simmer for 15 minutes.
Add the milk and simmer for a further 5 minutes.
Stir in the cheese, transfer to a food processer or use a whizzer and blend until almost smooth.
Garnish with paprika and a shredded spring onion (I just use the paprika.

Very warming xx Enjoy.

Thanks Tonicha.

You know when you say cheese triangles - do you mean the soft cheese ones that come in the round boxes? Like Dairylea.

With Hoola Hoops is my favourite.

Get your Hoola Hoop and push it down onto the Dairylea so that all the lovely cheese goes into the hole.

Yummy. Especially when washed down with chocolate milk.

But not together.

And chocolate milk....bleurgh.
