Sweet potato and butternut squash soup

For Debih - and any-one else

2 oniuons, peeled and chopped
2 garlic cloves, crushed
600g sweet potato, scrubbed and chopped roughly - I peeled mine
1 butternut squah, peeled, de-seeded and chopped
100g red lentils - can't get these here
pinch dried red chilli (optional) I used quite a lot 8-)
1.2 litres (2 pints) veg stock

Gently fry onions and garlic in a little oil, add 4 tbsp water until soft.
Add potato, squash, lentils and chilli, add stock and bring to the boil.
Turn down the heat, once boiled, and simmer for 20 minutes or until veg are soft.
Whizz with magic stick or liquiise.
Season to taste and serve with A GARNISH OF CHOPPED CHILLI.

Thanks Ton.

What do you use instead of the red lentils if you can't get them. I don't have any and fancy making it today. Just wondered if I have a substitute.

I've made virtually the same thing and it didn't have lentils in it - but it did add a squeeze of lime :)

I make a chickpea and tomato based soup Di and adding a squeeze of lime (or lemon) really gives it a great zoosh of flavour. :D :D

I've left them out and not added anything Debih. But I like the idea of lime/lemon :D :D :D
