Little Ginger Biscuits

I have no idea who originally posted this, it came from the old dm boards.
Every time I make these to take with us/give away, I now write out the recipe because everyone always wants it :)

Makes about 30
150g plain flour
25g cornflour (or even better rice flour)
125g butter, chopped into small cubes
50g light brown muscovado sugar
75g crystallised ginger
Dark chocolate, optional
Heat oven to 160c, 150 fan

Put all except chocolate into food processor, whizz till combined. Make into little balls, cherry tomato-sized. Put onto baking sheet and press well with fork dipped in cold water. Bake 12-15 mins.
When cool melt chocolate and brush on.

If anyone needs to know, these are about 30 cals each without chocolate ;)

I've also made them (when I didn't have enough ginger) with part walnuts; it was then a bit dry so added a few drops of milk to combine. They were yummy too :)

Oh yes these are dangerous too :)
I make them just for us sometimes, but tend to do them when we're going visiting, or for a little present, then we get just a few ;)

I forgot to get crystallised ginger yesterday - it's not something that stays in the cupboard for very long with Joe and myself around :oops: - but will get some when I'm next in town.

They sound lovely. I must make them - I have plain biscuits in the oven at the moment so maybe next week.

Two actually - I've had to hide them from Joe, he's hooked on them :lol:

I think I'll make these for my Mom instead of getting her an Easter Egg :)
