Jollof rice with chicken

I caught a programme the other day with Nigel Slater (love him!) and he was visiting different people from different cultures and they were cooking for him. I really enjoyed it. :D

Anyway..one of the recipes was a Ghanaian one - jollof rice.

It looked delish so I've googled the recipe and am going to make it for Wednesday's lunch as Conor is coming over again. :D :D

I have all the ingredients except for Okra which we can't get here but I'm told aubergine will do the same job.

I'll let you know how it goes.... :D :D :D

All the ingredients are ones I like but I did pull a yuk face when I saw the okra.

Pleasantly pleased we can't get it...I love aubergine. :D

I also like Nigel for the tweaks he does, and I remember the series where he visited houses of all nationalities to try their food - it is still on iPlayer and I just watched the jollof one. :lol:

Some of the girl's ingredients are a bit out of reach, but this recipe does not look too bad.

The thing about okra is that it is either cooked through, as a thickener, or heated gently as with the above.

Really do not like okra, and there are very few veggies I dislike, apart from the dreaded beetroot :P :cute: :lol:

I have some lovely shiny aubergines, fresh from the greenhouse :D

Ah, now then.

My first link was for iPlayer and the show. That might not be available to Ally due to availability to overseas users. Soz, Ally. The recipe the girl used had dried flaked crayfish and dried freshwater shrimps as well as 120g, yes, 120g of hot chilli powder for the rice sauce. :shock:

The other is the one Ria gives and does look pretty good. :lol:
