I caught a programme the other day with Nigel Slater (love him!) and he was visiting different people from different cultures and they were cooking for him. I really enjoyed it.
Anyway..one of the recipes was a Ghanaian one - jollof rice.
It looked delish so I've googled the recipe and am going to make it for Wednesday's lunch as Conor is coming over again.
I have all the ingredients except for Okra which we can't get here but I'm told aubergine will do the same job.
I'll let you know how it goes....
