got the chicken off the bone and shredded it and put it back into the veg mix. Had one portion tonight and another five to go into the freezer - not bad for one chicken

We almost always get 3 meals from one chicken, for the two of us, so yes 6 portions. Sometimes enough for pasta for 3 with the last bit.
Once in a while if it's a smallish chicken we're greedy and eat half between us two nights running, but then if it's a bigger one it will do 4 meals, easy.

I always brown my meat and veg before putting things in the SC. I like to bring the stock or wine to the boil too before adding it.
