So Kaz what's your secret? Last time I made Yorkies, they looked rubbish, flat as pancakes (and I used more eggs than I should have!)

I used to have them as a starter with milk and sugar as when I was little I hated gravy, new plate for my main and then just meat and veg for a Sunday dinner :)

The secret she taught me was to beat hell out of the ingredients, then cover with a cloth for at least an hour, then beat again just before putting them into very hot fat in the tin/tins.

I do the same as kaz but I use lard in my baking tin I also take them out the oven when the oil is hot and while I pour the batter in i,stand the tin on the top of the cooker with the gas on as it sizzling as I put it back in the oven
If also made toad in the hole with slices of corned beef out of a tin plus mixed dried herbs in the batter

Well I did all that apart from covering it over.....I had to look out for the sizzle as the batter was poured into the tin - fab!!
