Home made lemon curd

Ally, lemon drizzle was my dad's favourite cake and he called it Lemon Louise I used to make it for him.

Lemon curd is my Dad's favourite too, and he loves a nice big slice of home made lemon Madeira cake. I always remember that one was made every Sunday to be sliced up for him to take with his "snap", his packed lunch, to work everyday.
