Carrot cake

Help!!

I've just made a carrot cake for my mil birthday, and its a disaster!! It never cooked. I've just finished it off in the microwave.

Does anyone have a tried and tested carrot cake recipe they can give me hat I can make now or in the morning?

Don't worry, I found one for an orange and carrot that turned out quite nice

We had some delicious homemade carrot cake at my Mom's last night, I called her for the recipe but I guess they must be dodging showers and out in the garden so there was no answer.

I would still love one if you get it. The one I made I would have called an orange cake that had carrot in it. It was really yum, but not really what I was after.

I will, I want it for myself too!
She sent us home with half of the cake because Dad doesn't like carrot cake (think Peter Kay and his cheesecake sketch :lol: ) and she'd eat it all for herself. John took a slice to work with him yesterday and the rest...well let's just say that a certain little piggy has had to work extra hard in the gym since the weekend :oops:
