Hot and spicy chunky chicken noodle soup

Well, it is that time of year........

1 chicken breast sliced lenghtwise into three strips then crosswise into small medallions.
1 medium onion halved and sliced
2cm cube of ginger smashed and chopped
3 cloves of garlic smashed and chopped
chillies finely chopped with seeds (3...... or more)
1/2 tsp five spice powder
3 or 4 spring onions sliced, including the stalks
4 sliced mushrooms
1/2 cup of sweetcorn or a few fresh baby corns sliced
500ml chicken stock
1 dsp dark soy sauce
oil
flour paste to thicken
Egg noodles

Fry the onion until softened then add the chicken and cook till it loses its pinkness. Add the ginger, garlic, chillies and five spice and stir for two mins. Add the mushrooms, spring onions and sweetcorn and once the mushrooms look cooked add the stock, noodles and soy sauce. Bring everything to a simmmer for a few mins, taste and adjust any seasoning then thicken as desired.

It certainly sticks to the ribs. :D

I can see me making loads more soups - minestrone, mulligatawny, goulasch etc. in the coming weeks.
