Too hot/tired/worried to cook, so it was DIY from the freezer! Mick had a curry  and B has just had a carbonara. I had cheese on some rather nice rosemary flavoured crackers from Sainsbury's :)

Ooh, that sounds rather nice; did you make it up or did you follow a recipe?

I make them with various ingredients, depending on what I have.
These were pork mince, spring onion (essential I think), garlic, ginger, chilli, lime, soy sauce, black pepper. Think that's all.
I did it in a mini chopper but often just mash in a bowl.
Chilli, garlic, ginger and lime all from tubes/jars etc.

For a real quick version use the spring onion plus Thai red curry paste :)

Salad was shredded lettuce, fine strips of cucumber, mixed with rice vinegar, ginger, lime, chilli, sugar, should have had mint.

We also had dipping sauce, sweet chilli from a bottle, but with added rice vinegar.
